Let me preface this post by apologizing for not doing this pumpkin spice cake loaf visual justice by my lack of decorating skills.
I know the loaf looked a lot better before I frosted it, however… trust me: You’re gonna want to frost it, and you will love it.
The cake is moist and not very sweet, so the frosting adds just the right amount of sweetness to keep you going back for another bite.
The recipe makes two loaves, which is perfect if you have a Friendsgiving commitment or an office potluck, you get to keep one and take one! Win-win!
