PUMPKIN SPICE LOAF CAKE WITH CREAM CHEESE FROSTING

Let me preface this post by apologizing for not doing this pumpkin spice cake loaf visual justice by my lack of decorating skills.

I know the loaf looked a lot better before I frosted it, however… trust me: You’re gonna want to frost it, and you will love it.

The cake is moist and not very sweet, so the frosting adds just the right amount of sweetness to keep you going back for another bite.

The recipe makes two loaves, which is perfect if you have a Friendsgiving commitment or an office potluck, you get to keep one and take one! Win-win!

Instructions
Pumpkin Spice Bread
  1. Pre-heat oven to 350 degrees. Spray two 9X5" loaf pans with non-stick spray.
  2. In a large bowl mix sugar and oil with a hand mixer on for 1 -2 min. Add eggs and pumpkin, continue mixing until incorporated.
  3. In another bowl whisk together all the dry ingredients.
  4. Alternate adding dry ingredients and water to pumpkin mixure while continuing to mix.
  5. Divide batter between the two prepared pans.
  6. Bake for 1 hr to 1:10 minutes or until a toothpic comes out clean when inserted into the center of the loaves.
  7. Allow loaves to cool before preparing the cream cheese frosting.
Cinnamon Cream Cheese Frosting
  1. In a medium bowl blend all the ingredients with a hand mixer until light and fluffy.
Assemble
  1. Once loaves have cooled. Slice them horizontally in half. Spread 1/4 of the frosting over each of the halves. Top the loaves and use the remaining frosting to frost the tops of the loaves. (1/4 for each of the tops)
