MIXED BERRY HAND PIES

This is the time of year when we walk into the produce section of our local grocery store only to find a very limited fruit selection.

Basically, our choices consist of citrus, berries, apples, and bananas; maybe cherries if we’re lucky.

Not necessarily a bad thing I know. Especially, if you are as fond of berries as I am, blackberries and strawberries especially.

With that in mind, I thought I would share this quick and super easy recipe for mixed berry hand pies. It’s ‘super easy’ because I took a shortcut and used store-bought puff pastry dough (hehe).

If you aren’t the least intimidated by puff pastry and have a little time to spare, I’d say definitely give it a shot. Here is a great traditional puff pastry recipe and here is a vegan option as well.

Also if you know me personally, you know I’m never above adding a little kick to my desserts and pastries. So to this particular recipe, I added a tablespoon of Grand Marnier to the berry mixture. Totally optional though if you aren’t into that sort of thing.

Mixed Berry Hand Pies
These hand pies are super quick and easy to make, thanks to the store-bought puff pastry.

  1. Preheat oven to 425 degrees.
  2. Line a baking sheet with parchment paper. Set aside.
  3. In a bowl combine all four berreis, cornstarch, sugar, grand marnier, and lemon juice.
  4. In a small bowl mix egg and water for the egg wash. Set aside.
  5. Place puff pastry over a cutting board, make four squares. The size will depend on the type of puff pastry you buy. I bought a french brand and it came in rounds so I had to trim the dough and ended up with enough pieces for 4-4 inch pies. If the dough is rectangular you may be able to have enough to make 4 - 6 inch pies.
  6. Place four squares on the lined baking sheet.
  7. Brush edges of the pastry sqares lightly with the egg wash.
  8. Spoon berry mixture onto the center of each of the four squares, drain as much liquid as you can.
  9. Top pies with the remaining four puff pastry squares.
  10. With a fork crimp all four edges of each of the pies.
  11. Brush tops of pies with egg wash.
  12. With a knife make a criss cross cut over the top of the pies.
  13. If using slivered almonds, sprinkle them over the top of the pies.
  14. Lightly dust pies with brown sugar or turbinado sugar.
  15. Bake pies for 20-25 minutes.
Recipe Notes

This recipe makes four square hand pies. However, I took the dough scraps (my puff pastry came in rounds) and used them to create the little mini pastries you see in the pictures above. Basically, you take two strips then brush egg wash over the edges of one. Place a small amount of the berry mixture over one strip then take the second and wrap them in a criss-cross motion. It's ok if some of the berries spill out... kind of unavoidable. I baked them on a separate sheet for 15 min.
